My mother didn't have a timer in her kitchen. She had a feeling. I remember watching her stand in the courtyard, looking at the sky, deciding if the sun was “just right” for the mangoes.

When I started The Sun Dried Jar, I promised to keep that same rhythm. We wait days for the salt to pull the moisture out. We insist on grinding our own masalas at home. We use only cold-pressed oils and pink rock salt — because that's how it was always done.
